Frosting

Just as a follow up to my marathon post there... I pulled out my handy dandy recipe for chocolate frosting... substitute an equal amount of Splenda for powdered sugar. I get it all mixed and it doesnt look half bad once it all melds together. Time for a taste to make sure it balances out right... HOLY COW... at this moment I recall hearing on the news recently that splenda is something like 600 times more sweet than sugar... NO KIDDING!?!?! Why yes, yes it is. Because of all my "fun" over the weekend and its 5:15 pm - thats 45 minutes before we are supposed to be at the restaurant - I have to come up with something to cut that "sweet" out of the frosting. Im sure if Derek had been standing in the Kitchen next to me he would have seen the little light bulb go on above my head. I pick up the phone to call Mom, because she's supposed to be the all knowing cook (even though Im better ;o)) "Cant you throw cream cheese in chocolate icing?" Yup you can! So in it went, heck what did I have to lose at this point? Turns out it cuts the sweet quite nicely, doesnt help the calories but pfffft. At this point who cares!

The cake turned out a little dense but all in all it was alright for sugar free! Personally, I happen to like the fully sugared kind myself.

The dinner was fun, I wasnt sure about going to dinner with 15 people where I only knew Keith and Ruth Ann - the birthday girl, and of course Derek. I enjoyed getting to know their family since they know all of mine! Man they have a bunch of kids AND grandkids.. and one very cute and very sweet great grand daughter. One of their daughters is an Irving policewoman and she just happens to know Matt. Go figure! One of their grandsons goes to Abaline Christian University and he's on their drumline... he happened to sit next to Derek and that was a good match! Not only did he carry the #5 Base Drum his first 2 years on the Drumline it seems that Derek's fascination with his hair color and such must be part of it. They were the only two with "spiked" hair at dinner and I was informed to not be surprised if Derek wants hair another color than Blond... he went through all that too! hehehehe good to know. Nope no pictures either... are you kidding? Maybe I'll take a few for posterity next week while Im home on Vacation. Anyone wanna come have lunch with me? Ok its time to get some work done!
